Serves 2/nIngredients:
Mushrooms
Butter
1 Shallot
1 clove of garlic
Chicken stock
Salt
Pepper
Olive Oil
Crusty bread
Pecarino cheese/nMethod:
Break mushrooms and chop them, not too small.
Add a couple of knobs of butter to a heated pan.
Chop a shallot and a clove of garlic, and add to the pan.
Add the chopped mushrooms.
Add a pinch of salt and pepper.
Add some chicken stock, approx 300 ml.
Add another knob of butter.
Leave to reduce./nIn another heated pan, add some olive oil.
Slice some crusty bread.
Fry 1 side of the bread for about 15 seconds./nPut the reduced mushroom mix onto the bread./nGarnish with a few shavings from a pecarino cheese./n
